Parmesan quiche with apples and speck – recipe from “Fotogrammi di zucchero”

2018-04-06 Food blogger Antonella of Fotogrammi di Zucchero made us a very spring-like recipe, perfect for a picnic on the grass.

“An unusual savoury pie, the kind you might be sceptical about until you actually try it: an apple pie, but salt, sweet and slightly tart, balanced by flavourful speck ham, with a rich pastry crust made with parmesan cheese and top quality extra virgin olive oil.”

Her secret? Cutting the apples extra-thin, so that they cook completely and dissolve in the mouth, with a speck that is not too salty.

It’s lovely to look at (and to photograph; I fell in love with it!) and very useful because it’s scratch-proof, stain-proof, and resistant to acids and heat:  I cut the apples and onions on it, squeezed the lemon and kneaded the dough for the quiche right on the countertop!”
